Peppermint Bark Cookies




Peppermint Bark Recipe
The peppermint bark recipe that my family and I swear by is from the famous Paula Deen. It is simple, yet delicious!
Ingredients
  • Crushed candy canes, to yield 1 cup
  • 2 pounds white chocolate
  • Peppermint flavorings, optional
Follow these directions and you will have tasty peppermint bark in about an hour (includes prep, cook and chill time).
Directions:
  1. Place candy canes in a plastic bag and hammer into 1/4-inch chunks or smaller.
  2. Melt the chocolate in a double boiler. You can also melt the chocolate in the microwave when you are in a time crunch. If you decide on the microwave, use a microwave bowl microwave bowl that is safe. The cool touch microwave bowl is a great option because the chocolate melts inside while the outside stays cools, allowing you to easily grip the bowl.
  3. Combine candy cane chunks with chocolate (add peppermint flavoring at this point if desired).
  4. Pour mixture onto a cookie sheet layered with parchment or waxed paper and place in the refrigerator for 45 minutes or until firm. Remove from cookie sheet and break into pieces (similar to breaking up peanut brittle).
Note: Making peppermint bark can be a little messy, so you may want to protect your clothing with an apron.
